Homemade Pancakes & Apple Compote

These pancakes are thick and fluffy and are great with pancake syrup or jam. The apple compote topping adds that delicious sweet and fruity flavor that reminds my Plus 1 of apple pie. Finish the dish with eggs and bacon makes for a satisfying breakfast.

Pancakes are one of my go-to breakfast dishes. For years I would buy the boxed pancake mix and be unhappy with the pancakes. I would always add a dash of this and a dash of that until the boxed ingredients were just an ingredient that I didn’t need. Now I make my pancakes from scratch. Give it a try. It will be your go-to breakfast.

INGREDIENTS PANCAKES (Makes 4)
1 cup AP-Flour
1/4 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Sugar
1/4 tsp Salt
1 Egg
1/2 cup Buttermilk or Sour Cream and Water Substitute
1 Tbsp Butter (Melted)
1/4 tsp Vanilla Extract
1 tsp Butter for cooking

INGREDIENTS APPLE COMPOTE
1/2 Granny Smith Apple (Chopped)
1 Tbsp Brown Sugar
1 Tbsp White Sugar
1/4 cup Water
1/4 tsp Cinnamon
1 Clove

How to make Homemade Pancakes & Apple Compote

1. Combine sour cream and water (70 to 30 Ratio) to make your own 1/2 cup of buttermilk. Set the mixture aside for 10 minutes at room temperature. Skip this step if you are using real buttermilk.

2. Separate one egg into egg yokes and egg whites to make your wet ingredient. This will make mixing melted butter into the eggs easier. Mix 1 tablespoon of butter into the egg yokes, then thoroughly whisk in the egg whites and vanilla extract. Mix in the buttermilk after 10 minutes.

3. Add AP-flour, baking soda, baking powder, sugar, and salt in a bowl and mix until well combined.

4. Pour the wet ingredient on top of the flour mixture, then fold the ingredients together no more than 15 times. You will see unmixed flour and lumps in your batter. Do not mix the batter any further. The flour will absorb the moisture and will be cooked out. The majority of people over-mix their pancake batter.

5. Allow the batter to rest for 10 minutes. This will allow the buttermilk, baking powder and baking soda to raise the flour. In 10 minutes, the batter will be at its peak with bubbles for creating fluffy pancakes and will diminish after 30 minutes the longer it rests even when refrigerated. My batter was cooked 30 minutes after it was mixed.  If you like a flatter pancake, then stir the batter until smooth with no lumps. Whip the egg whites until stiff, then fold into the batter a super fluffy pancake.

6. Heat the largest and heaviest frying pan you have to 180°F for even heating. Pour a 1/4 teaspoon of water into the center of the hot pan. If the water bubbles dance around for 10-12 seconds before evaporating, then the pan is around 280-320°F. Grease the pan with butter and wipe off the excess. I used a tablespoon to carefully scoop two large tablespoons of batter onto the frying pan. The two scoops will produce fluffy 2-1/2″ diameter pancakes. Be gentle when pouring the batter to preserve the bubbles in your batter.

7. Apple Compote: Place 1/2 of a Granny Smith apple, 1 tablespoon brown sugar, 1 tablespoon white sugar, 1/4 teaspoon cinnamon and 1/4 cup water into a saucepan with a lid.

8. Heat the saucepan to a simmer to stew the apples. Stir the apples after 5 minutes. Use a toothpick and check the doneness of the apples. We like our stewed apples a little firm. Stir in the cinnamon and one clove to the apples. Add a tablespoon of water and remove from heat if the sauce is too thick. The sauce will continue to thicken even after the apples are taken off the heat. Lid the saucepan to keep the apples warm.

Plating: Serve the Apple Compote hot on top of the warm pancakes. We added 1 strip of bacon that was previously par-cooked and an over easy egg. My over easy egg has tabasco sauce. Spicy, sweet, crunchy, and savory. All my favorite food groups on a small 10-inch breakfast plate.
